A Place at the Table: Day 15

Thursday – This morning, after consulting with my wife, I decided to give the chickpeas and green beans a quick stir fry to add some flavor and just mix things up a bit. A little oil, garlic, ginger, and curry powder yielded a lovely Indian version of my vegetarian rice bowl. It was the best lunch I’ve had in two weeks!  Better still, I’ve had no digestive issues for a second straight day.  So, I feel fairly certain that whatever my issues were on Tuesday, they were related to the broth.

Tomorrow will be time to shop again.  I have half a bag of rice left, a half bag of chickpeas, a third of a loaf of bread, a third of a jar of peanut butter, and one banana.  It’s a big improvement over last week where I used up pretty much everything.  However, the bread and the peanut butter won’t be enough to carry me through another week.  If I decide to stick with pb&b sandwiches, I’ll have to buy more of all three ingredients, which won’t free up much room in my budget.  I’m also facing the need to buy coffee again.  So, I’ll have to sit down and do some calculations before I head to the store – hopefully tomorrow.

Overall, I am encouraged.  I have had more to eat this week than last week and I still have food remaining.  That’s not to say there haven’t been times when I’ve been hungry.  But after two weeks, I’ve discovered that living on this meager budget can be done. It takes planning, intentionality, frugality, and a little help from your friends.  Nothing can be taken for granted – but that’s a healthy thing, emotionally and spiritually.

Thank you, Lord, for helping me through this week and for showing me that less sometimes really is more.  Amen.
